Christmas treats

For most of us the holiday season is a time of fun, a time of joy, and most of all a time to spend with our loved ones; many of whom we may not see throughout other parts of the year.

 

We love the people around us and we want to give them things that make them feel special to us; to show them we care.

 

So, what better way to show those around you that you love them this Christmas than with an amazingly delicious Christmas ice-cream cake for dessert on Christmas day? It pairs perfectly with hot weather and great company.

 

Here’s what you’ll need

2 L strawberries and cream ice-cream softened

300g raspberries, chopped

4x55g Turkish delight bars, chopped

1 tbsp. icing sugar

Fresh raspberries to serve

Floss

 

Method

 

Lightly grease a round loaf pan and line with plastic wrap.

 

Combine the ice-cream, chopped raspberries, and ¾ of the Turkish delight bars in a large bowl. Mix well, and spoon mixture into the lined pan ensuring mixture is smooth on top. Place in freezer for 6-8 hours.

 

Once properly set, turn out the ice-cream cake onto a serving platter. Sprinkle the fresh raspberries and remaining Turkish delight chunks over the top of the cake and around the sides. Lightly sprinkle with icing sugar and serve. Enjoy.

 

Tip: For that extra special add-on, try throwing some floss on top – you can get this already made from your local supermarket.
