Spinach and chicken summer salad
As the weather warms up, you will be looking for easy to prepare recipes.

You might be looking to use some leftover roast chicken from Christmas day, or add in a healthy salad option after a little bit of overindulgence.

Either way, this recipe is delicious and will have you feeling good on the inside and out.

What you’ll need:

8 cups spinach
500gms chicken breasts or leftover roast chicken
1 tablespoon olive oil
1 tablespoon lemon juice
1 tablespoon fresh rosemary chopped finely
1 tablespoon fresh thyme chopped
1 tablespoon fresh sage chopped finely
1/2 teaspoon sea salt
1 pomegranate
1 avocado sliced
1/2 cup pecans toasted
1 apple cut into chunks
Your choice of your favourite dressing


Prepare the chicken by marinating it in a bowl with olive oil, lemon juice, salt and herbs. Marinate for at least 30 minutes.

Grill the chicken on a grill pan, about 8 minutes per side, until browned and cooked through. Slice chicken.

Combine all salad ingredients and serve with your favourite dressing.
