Comfort cooking is essential to get you through the middle of winter. Throwing together a delicious pizza can be really fun and an easy dinner, and if you are trying to keep kids entertained this school holidays, pizzas can be a great way to get them helping you in the kitchen.

 

This delicious recipe is for a tomato and prosciutto pizza. Bellissimo!

 

What you’ll need:

 

2 x fresh pizza bases from the supermarket or bakery

6 slices thin prosciutto, roughly torn

1 packet of pizza sauce

2 cups loosely packed baby rocket

1 cup mixed red and yellow grape tomatoes, halved

½ cup bottled basil pesto

 

Method:

 

Preheat oven to 200°C. Cover bases with pizza sauce.

 

Top evenly with the prosciutto, tomatoes, cheese, and salt and pepper to taste, and pop in the oven for 8 –10 minutes or until pizza bases and prosciutto are both crisp.

 

Top with rocket and remaining cheese. Spoon over the basil pesto. Season with cracked black pepper.

 

Serve with Greek salad. Top pizzas with crumbled feta and baby rocket, if desired.
