Are you trying to add some fish to your diet each week? Salmon is one of the most nutritious foods on the planet and has a bunch of health benefits such as good Omega 3’s and is a great source of protein.

It is also high in B vitamins, a great source of potassium, and it may reduce the risk of heart disease.

This delicious baked salmon recipe is paired with a zoodle salad.


Baking Salmon

Pre-heat oven to 180°C (160°C fan-forced).
Place salmon on a lined baking tray.
Season salmon with salt, pepper, oil or your favourite herbs and spices.
Place into oven and cook salmon for 20min/kg or 8-10 mins for single portions.

Vegetable Zoodle salad

What you’ll need:
1 zucchini
1 cucumber
1 carrot
1 apple (any type)
2 tablespoons freshly squeezed lemon juice
1/4 cup olive oil
1/4 teaspoon minced garlic
2 tablespoons red wine vinegar
salt and pepper to taste

Spiralize all vegetables and fruit using the small blade from the spiralizer. Place all curls into a large bowl.

Whisk all the ingredients for the vinaigrette into a small bowl. Pour some of it over the vegetables and place in the refrigerator for at least 30 minutes.
