As the Spring school holidays are fast approaching, you might be thinking what I am going to do with the little ones this year?

There are heaps of activities on this school holidays; The Big Wedgie will be back at Glenelg for another season, there are museums to explore, kids play classes popping up all over the city and there are loads of opportunities for you to get out and about as the weather warms up.

You can also get into the kitchen and whip up some yummy treats with your children or grandchildren this holiday season.

These ice-cream sandwiches are super easy and delicious. They are something that the kids can do with little help from the parents, but let’s face it, you’ll want some too.

What you’ll need:

1 packet chocolate chip cookies
3 cups vanilla or chocolate ice cream, slightly softened mini chocolate chips


  • Place 1/2 cup ice cream on the flat side of one cookie.
  • Make a sandwich by placing another cookie on top of the ice-cream.
  • Roll sides of sandwiches in chocolate chips or colourful sprinkles.
  • Wrap tightly in plastic wrap & freeze for at least 1 hour before serving.
