Celebrate Lunar New Year with our Prawn Fried Rice
 With Lunar New Year celebrations now just behind us, it’s got us feeling Asian-inspired in the kitchen.
 
What better way to keep on celebrating the amazing Asian food culture we get to enjoy than with this amazing Prawn Fried Rice dish. And we’ve even used Tiger prawns this year!
 
What you’ll need:
 
1 tbsp. vegetable oil
2 cloves crushed garlic
2 carrots, peeled and chopped
1 green capsicum
500g green tiger prawns, peeled and deveined
600g cooked white rice
1 cup frozen peas, defrosted
2 tbsp. soy sauce
2 tsp. sesame oil
1 large egg, whisked
Sriracha
2 tbsp. finely chopped spring onions.
 
 
Method:
 
Heat vegetable oil in pan over a medium heat. Add crushed garlic and stir until fragrant.
 
Add chopped carrots and green capsicum and sauté for around 3 minutes. Add green tiger prawns and cook for 3-4 minutes, stirring occasionally.
 
Stir in pre-cooked white rice, add peas and season with soy sauce and sesame oil. Sauté for a further 2 minutes.
 
Once this is done, push the rice mixture to one side of the pan, and add the egg to the empty side. Stir the egg constantly until almost fully cooked, then fold egg into the rice mixture.
 
Garnish with Sriracha and spring onions to serve.
