Chilli Beef

The colder weather is upon us and what better way to warm the heart and soul than with a big bowl of tasty Chilli Con Carne? Everyone seems to have their favourite recipe but we think this one is an absolute cracker. You can have this tasty dish on the table in about half an hour.

 

Preparation and cooking time: Approx 30mins. Serves 4.


INGREDIENTS:

  • 1 x brown onion finely chopped
  • 1 x green capsicum finely chopped
  • 1 x celery stick finely chopped
  • 400g extra lean beef mince
  • 1 x tbs smoked praprika
  • 2 x tsp ground cumin
  • 1 x tsp dried oregano
  • 1 x pinch chilli flakes
  • 1 x tbs tomato paste
  • 1 x 400g can crushed tomatoes
  • 1 x 410g can red kidney beans
  • oil spray
 

METHOD:

  1. Heat a large non-stick frying pan over medium-high heat. Lightly spray with oil. Cook onion, capsicum and celery, stirring occasionally, for 5 minutes or until softened. Add mince and cook, stirring to break up lumps, for 5-7 minutes or until browned.
  2. Add paprika, cumin and oregano and stir for 1 minute or until fragrant. Add tomato paste, can tomatoes, beans and ½ cup (125ml) water. Reduce heat and simmer for 5 minutes or until thickened.
  3. Serve with rice, sour cream or guacamole, and corn tortillas.


Note: if you can wait it out a bit, simmer for a little longer to allow the flavours to develop even more.
